When I crave scones I always head straight to the same: cornmeal scones with fresh blueberries or dried cherries or cranberries.
Without fail, this is my go to recipe:
1 1/2c flour
1/2c cornmeal
1/2c sugar
2 1/2tsp baking powder
1/2 tsp salt
1 stick of butter
1/2c berries
1/2c buttermilk or cream
1 egg
The technique is always the same. Mix the dry ingredients. Cut in the cold butter, or mix in grated frozen butter. Mix in the wet ingredients until combined, being careful not to warm up or overwork the dough. Press down, cut into shape and bake. 400deg gets you good, crusty edges, just the way I like them:).
