This one's my go-to everyday soup... make it with anything you have on hand, any veggies (frozen or fresh) and any stock (powder, store bought or homemade). Anything goes when making this healthy, speedy soup for when it suddenly gets cold!
For the vegetable soup:
1c left over tomato sauce or a spoonful of tomato paste and a chopped tomato
2 garlic cloves
1c frozen spinach
4 cups chicken stock, enough to cover
Simmer and season with a bay leaf, thyme, salt and pepper
