Crispy Rice Salad:

• 2c Cooked jasmine rice, tossed in sesame oil/gochujang/soy/fish sauce and toasted until crispy
• 2 Avocado, cubed
• 1c Edamame, cooked, cooled and salted
• 6 Cucumbers, thinly sliced
• 1/2c Peanuts, chopped
• 4 scallions, thinly sliced
• A big bunch of mint & cilantro, chopped
• Any Asian style salad dressing
